The new nut butter entices with the scent of exotic lands

Anyone who loves sweets surely already knows our delicate nut butters, which we create in collaboration with Barenuts, producers of the purest nut butters made from premium nut kernels. Together, we constantly invent new combinations, and the latest, the sixth one, has an outright fairy-tale flavor. Like on a pink cloud To the base of cashews and delicate macadamia nuts, we added organic white chocolate made from cocoa butter obtained from organic cocoa beans. Another essential ingredient is our unique red Kampot pepper, handpicked from the ripest red berries. It is a delicacy that surprises many with its sweet taste and typical fruity tones. The fragrant touch was added by organic Bourbon vanilla. And the best part at the end. Into this butter, we also added colorful dragon fruit, whose taste can be compared to other exotic fruits such as certain types of sweet melons or kiwi. Why dragon fruit? Also known as pitahaya, this fruit is one of the most beautiful fruits in the world, full of colors and various textures. It is called dragon fruit not because it burns or stings in any way, but because of its skin, which truly resembles bright red dragon scales. Dragon fruit is full of vitamins, also contains iron, calcium, and phosphorus, and can boast a high content of antioxidants that prevent aging of the body, and some scientists are even studying its anti-cancer effects. Quality nut butters are a valuable source of healthy fats without cholesterol. Together, they form a perfect tandem suitable, for example, for guilt-free snacking or to supplement the right nutritional values in your diet. Dragon fruit is a symbol for us of the exotic Cambodian markets that we love and where we ourselves shop when we are in Cambodia. It was only a matter of time before this cheerful, shaggy fruit appeared with us! Thanks to its amazing colorful appearance, it also colored our new nut butter pink and can brighten your whole day. Introducing our most peppery gin yet

Another year, another amazing .pepper..gin. Again in a limited edition and again in collaboration with Martin Žufánek. If you know us, you know that twice a year we organize Night Shopping – a night full of great prices and gifts with purchase. This year we spiced it up with the premiere of this bottle at our .pepper..party, where we also introduced our pepper cocktails. Try it, give it as a gift in a box made from rescued cardboard, or expand your collection of unique bottles. Martin delivered the first 100 pieces, which he personally signed and gave us for sale. “It’s a concert of flavors, and the first violin in it is played by white Kampot pepper! ” When one of the best Czech distillers and an expert in Italian cuisine come together, the result can only be absolutely perfect. Poor processing and peeling from unripe black pepper are unfortunately typical for pepper from large sellers who ship it to our continent improperly dried, which significantly affects its aroma and taste. And that is a great shame because white pepper is something absolutely unique, especially true for Kampot pepper. True white Kampot pepper is actually the heart of red pepper, which is hand-peeled after several days of water soaking. Once it dries in the sun, our farmers carefully sort it. Meet our stars of Great Taste 2023

A year has passed and the London jury once again awarded the so-called gastronomic Oscars for the best products in the world. This year again, peppers, cheeses, chocolates, and even truffles competed against each other. Out of 14,205 samples from across continents, we earned 23 stars and once again shone as the most successful Czech company, bringing home the most awards for the taste of our products from Great Taste! We received stars for 11 of our products – a total of 23 stars. We are most proud of the fresh pepper category, which received 3 stars in total, meaning that the jury favored the taste of green pepper in salt flower, fermented pepper, and freeze-dried pepper. Freeze-dried (lyophilized) Kampot pepper with salt continues the success after it received the highest rating two years ago, GREAT TASTE – GOLDEN FORK in the global superfinal. "Instant explosion of flavor, rich and spicy, salty and hot, fragrant and aromatic.The taste is exactly what we would wish for – long-lasting and piquant." Equally well rated by the judges was Green Kampot pepper in salt flower, about which the jury said: "Wow! It’s truly an explosion of flavors – fresh, celery-like, piquantly sour with a hint of fruity heat and spice.The berry literally crunches in the mouth, releasing a beautiful taste on the palate and tempting for more food." And three stars were also awarded to the presidential edition of our Fermented salted Kampot pepper. "How can such a small berry offer such an explosion of flavor, heat, fruit, and spice?It is warming, fiery, intense, and absolutely stunning." We owe all this primarily to our farmers from Kampot, who, thanks to fair wages, are able not only to maintain the fields in perfect condition but above all to care for this unique pepper with the care it deserves. At this year's edition of GREAT TASTE, our sea Kampot salts also excelled and are therefore the highest quality salts of 2023 on the Czech market. The Sea salt flakes – salt pyramids immediately received 3 stars. “Fresh radiant salt with distinctly large crystals, fantastic taste, mineralization, and a very long finish.Balance in the mouth with a hint of sweetness makes it a clear three-star product.” Fleur de Sel – fine and hand-harvested salt flower received two stars, just like our coarse sea salt for grinders. The winning eleven was then completed by Kampot pepper in black, red, and dark red. The jury was impressed by delicacies such as peanut butter with sea salt or authentic Italian egg-free pasta with Kampot pepper. The GREAT TASTE competition thus confirmed this year that our Kampot pepper reaches the highest quality of all producers worldwide. This was reflected in the evaluation of products from our partners who work with our pepper. Congratulations to the family smokehouse Trneček, who make salmon with Kampot pepper. They received a total of 3 stars for two of our joint products, and last but not least MarmelLady – for our pear jam with lyophilized pepper, which also earned 1 star.

Tequila combined with absinthe forms a strong base, beautifully complemented by sweet agave, the saltiness and heat of fresh green Kampot pepper, and the rough Birch tonic, which hides elderflower and birch sap. Dare to enjoy one with 25.6% alcohol. The inspiration for this refined range of mixed drinks comes from our travels across the USA. But great thanks for their creation go to the most qualified people we sat down with – bartender Marcel Jinoch and the artisan distillery Landcraft. Marcel mixed cocktails for six years in New York at the famous Le Pavillon, known to celebrities like Angelina Jolie, Jeff Bezos, and Taylor Swift, and he is very well known on the Czech bar scene because he brings new trends from NY to us. When Italy meets Cambodia. Taste our perfect pepper spaghetti

Life is too short not to experiment with it. However, when you take the best pepper in the world and combine it with the greatest pasta treasure that Italy has, the result can be nothing other than a perfectly crafted Italian spaghetti concept. At the beginning, however, there was the question of whom to turn to with a request to create perfect spaghetti with a pepper base for us. In the end, we decided on a family business located in the middle of the Alpine massif Alpe della Luna near Tuscany. This is exactly where Pasta di Borgo Pace is based, where pasta preparation has been dedicated to for many generations. Local experts in the field of gastronomy and baking created a recipe for us that relies on several simple ingredients, which are crystal clear Alpine water, sunshine, and the highest quality hard wheat, and of course, the best pepper in the world grown in the Kampot province must not be missing. Processed by traditional methods The secret of the unique taste of the spaghetti lies, similar to our pepper, in the method of processing. The pasta is hung out immediately after production and dried at about 40 degrees Celsius. During this process, they gain their characteristic length and elasticity, which they acquire during 20 hours of drying. This process also defines their structure, which is not smooth like the pasta you are used to from the supermarket. Every Italian will tell you that for the sauce to hold well on the pasta, their structure must be rough and slightly floured. You do not have to fear that the roughness would transfer to the taste; on the contrary, these pastas are perfectly soft. This is also contributed to by the gentle stone grinding of semolina flour, thanks to which the flour contains fine wheat germ that softens the taste of the pasta and also provides a rich protein content. Pasta is ideal to pair with classic tomato or cream sauces, and you can never go wrong with a few shavings of Parmesan. And now there is nothing left but to wish you a good appetite.

To the experts Ondra and Petr from the Landcraft distillery, we added Michal from the Heršffek Chocolate Factory with his perfect fairtrade cocoa beans and unique Bean-to-Bar chocolate production, as well as the peel from Sicilian organic oranges from Mr. Olšák of ChuťSicílie. We extracted all the essences of these perfect ingredients and blended them into a single whole into a very fine distillate of a new category: nørGin. It is an exotic compilation of unexpected flavor tones that will take you into a completely new world of gin experience. Juniper? Don’t expect it in this case. We truly completely reworked the basics of gin and built them on the unique Kampot green pepper, which makes all the flavor sensations dance and slightly sharpens them. The story of nØGinu

This is not a fairy tale, but thanks to its epic, almost unbelievable story, it could be one. About how the guys from  the Landcraft craft distillery do their job more than well, we all could be convinced last year when our joint .pepper..gin just flew off the shelves. This year, our friendship decided not only to spice it up but to add the intoxicating scent of chocolate and Sicilian oranges. Let Ondra from Landcraft speak, who beautifully wrote down our shared story, the journey that ended with the creation of a new category of circular distillates: nøGin. Or did it just begin? “We found Mr. Olšák... ... he imported organic products from Sicily, ran a gym in Mělník, and probably had orange juice vending machines everywhere. I explained to him what we were about, and he kept frowning: look, don’t take this the wrong way, but I just don’t want to sell you oranges just so you can peel the skins off them. This has to be solved somehow. Let me think it over. The next day he called us again: You know what? I’ve got it. Every Friday and Saturday I make fresh juice at the Holešovice market hall. I throw the peels into bags and then the bags into the trash. When you want them, you can always pick them up on Saturday after noon. And that was it. Although it meant going to the market hall every Saturday, it was manageable on a rotating basis,” and so the peel of Sicilian oranges entered this story first, the only one Landcraft has been using in their distillates since 2019.  “Michal Herůfek shows us his family chocolate factory, a producer of chocolate pralines, a melangeur, and many other wonders. Then we move on to the process of purchasing cocoa beans, their fermentation, and roasting. Here is the roaster. Here the skins are peeled off those beans. We put those into these bags. Wait! Waste? Circular eyes will enlighten us. Michal, would you give us these bags? In the following weeks, we try extracting and distilling cocoa skins. We use Petr’s education in organic chemistry, vacuum, fat separators, and other tricks so that cocoa butter, which the skins are full of, does not get into the final product. In the end, we succeed, and the result is a distillate that smells like freshly poured hot chocolate.” You already know chocolate from the Herufeks well from us in connection with our Kampot pepper. We could imagine this combination also in alcohol, so we said: why not. What is negin? "When Klára and David then come up with the question of whether we are ready for the next .pepper..gin. edition, we try to persuade them that it doesn't have to be gin. Look, today anyone can make gin. Let's try negin. What is negin? Simply something like gin, only you don't put juniper in it," What? Is that possible?  The guys explained to us that yes, it is. That gin is a category of juniper-based distillates, whose taste everyone can imagine. However, there are huge differences among individual gins: in some, there may be so little juniper that it is practically unnoticeable. Their core is formed by other herbs and additives. But the name gin is so significant that they don't omit it.  Our nørGin shows that it doesn't need a category, but it doesn't hide its origin. It is characterized by distillation in ultra-fine alcohol, where all three essences – green Kampot pepper, chocolate, and orange – were extracted separately beforehand. We found out that juniper is not needed at all for this distillate to be complex in taste and aroma. A normal label would be quite boring, we said. So we finished this rebellious work at the Butterflies&Hurricanes art house, where the artists designed the right, distinctive... A label? Not at all. These are fragments of our story. There are 19 of them in total, and only you can choose what form your nørGin will take. They represent the basic values of all of us who stand behind nørGin: circularity, ecology, sustainability, love for the planet, for our work, and for the people around us. And the recommendation from the guys at Landcraft? "Alone? Divine. With tonic? Brilliant." And we just add that the absolutely brilliant tonic is precisely their To_Nic, or the grapefruit soda from Imperial. :-)

.pepper..beer won in the Cervesia Specials competition!

When the Czech Republic is mentioned in the world, people usually think of Jaromír Jágr and right after him, beer. We Czechs are simply world-famous for our love of the hop beverage. That’s why we couldn’t resist trying to realize the idea of combining our national treasure with a bit of spice from distant Kampot. And it wouldn’t be us if pepper didn’t play the main role in it. Pilsner beer, properly spiced with Cambodia To be able to create a beer special flavored with Kampot m pepper, we needed to find an equally crazy partner, who turned out to be the Proud brewery, a specialist in various beer anomalies that, however, taste damn good. That we chose correctly is also proven by the latest win of our .pepper..beer PEPPER YOUR SAISON in the Cerevisia Specialis competition, where we placed first among eighteen beer specials in the unusual beers category. What does beer with pepper taste like? That our pepper beer is truly unusual can be seen and tasted right away. A gently cloudy golden color accompanies a flavor journey through the Cambodian pepper plantations, which in many ways resemble Czech hop fields. The delicate aroma of dark red Kampot pepper brings a slightly earthy spicy taste to the top-fermented, unfiltered, and moderately bitter beer, supported by an exotic hint of clove. The red pepper also ensures the presence of subtle fruity tones, which are the cherry on top of the foam of this specialty. Our pepper beer is a great refreshment but also finds its place when paired with red meat. Don’t hesitate to experiment a bit with it in the kitchen, basting meat with it or using it in sauce preparations. However, we don’t need to reveal more. Pepper chocolate. Why you won't want any other anymore

We have prepared this delicacy for you together with Jitka and Michal Herůffek, who have been dedicated to making chocolate treats for almost ten years. Despite initial difficulties in finding the right beans, they eventually managed to discover the true cocoa treasure from Belize, Guatemala, and also the Dominican Republic. Just like us, the Herůffeks source cocoa beans directly from local farmers, which they then process in their chocolate manufactory in Čejč, South Moravia. The idea to combine our Kampot pepper with chocolate had been in our minds for a long time, and when we learned about the Herůffeks and their journey, we didn’t hesitate for a second.
