"Happy birthday, dear .pepper..fielde!" We are already celebrating the 5th birthday

This year we celebrate 5 years since we founded the .pepper..field project. And even though some people may not like self-praise, today it made us happy. Our colleague Aleš wrote us a birthday email that warmed our hearts and at the same time somehow summarizes the last few years we have experienced together. Happy birthday, .pepper..field! 5 years. I have been with you for so long and I love everything you do. Well, now we do it together. :-) When you were looking back in 2018 for "Christmas cabinets for our sales booth in Smíchov," something told me to immediately write to Klára and David, you want this! And also, yes. Even though in the first years I only helped out occasionally at festivals, I never felt like it was a company or something cumbersome, but just friends and family collaboration. That has remained until today. Despite all the night shifts, demanding foreign trade fairs, or my first trip to Cambodia. But what would I... after all, you were there with me. Thank you very much and I wish you and our project not only great things but also the occasional stumble here and there, because they always just made us stronger. Although I am looking forward to January and a bit of peace when you are back at the farm... Happy birthday and just keep it coming! I appreciate you, your effort, weekend messages (less now, but still), actually everything you do. Both for us, your colleagues and friends, as well as business partners, customers, and of course those 2,000 amazing souls in Kampot.

We handed over .pepper..bikes bicycles to the children of our farmers

For us, an ordinary bike is a small thing. For the families of our farmers, it is almost a luxury. Therefore, we thank everyone who visited the Prague restaurant SIA in the middle of summer or subsequently participated in the private collection. Thanks to this, we donated 20 .pepper..bikes bicycles to the children of our farmers. Take a look at the joy and smiles we brought to Kampot. From Wednesday, July 19 to Tuesday, July 25, you could try the special Rabata grill menu with Kampot m pepper thanks to chef Jiří Štift at the SIA restaurant. From each order, we donated 10 CZK to our project .pepper..bike - bikes for children from the farmer families we support. We were surprised by how many of our fans and customers reached out saying they also wanted to contribute but could not visit the restaurant that week. After all, there is only one SIA and it is only in Prague. So the idea of a private collection was born. Before summer ended, we raised more than we expected. Today, 20 children have a new .pepper..bike parked at home. And from kilometers that they had to walk long hours every day, their journey has been shortened to minutes. We thank not only the SIA restaurant but also all donors, customers, and fans. You help us keep our promise - to improve living conditions in one of the poorest countries in Southeast Asia.

The beauties of Kampot through the eyes of Kristina Němčková

When your passion for culinary creation combines with a love for travel, it can bring incredible experiences and discoveries both in the kitchen and beyond its borders. Kristína Nemčková is exactly such a personality – the youngest winner of the MasterChef competition worldwide and a chef with an indomitable passion for culinary adventures. Her story intersected with ours, and Kristína discovered not only the magic of Kampot pepper but also many of its secrets. Take a look at Kampot pepper through her eyes. At the end of 2022, Kristína found herself in Southeast Asia. During a planned trip from Singapore to Vietnam, a spontaneous idea was born to visit Kampot. She consulted with our Klára, co-founder of the .pepper..field brand. She connected her with our local colleagues, Ajja and Nicky. The spiciest night of the year – 6 hours, 120 guests, over 200 kg of Kampot pepper

Do you remember what you were doing on September 14, 2023? We won't just forget it easily. For our customers, we prepared Night Shopping on the e-shop – a night full of discounts and benefits that we launch twice a year. Additionally, we organized a .pepper..party in Prague's Holešovice for our business partners, friendly brands, journalists, chefs, and influencers, who could experience Cambodia with all their senses. Ball by ball, .pepper..coin to .pepper..coin All the invited guests could get to know Kampot peppercorns up close, experience a real pepper farm, try sorting peppercorns, smell them, guess their colors, search for them, and collect them. Just like our farmers in Kampot. They collected the balls in the form of .pepper..coins – pepper money, which they then used to shop at our .pepper..market for goods from Kampot pepper bags to a new bottle of Žufánek. But they could also bargain like at a real Cambodian market! The .pepper..bar for presenting the new limited edition takes our breath away.Pepper catering arrives. 16:00"So here we are!"The whole .pepper..team is on site and co-founder Klára explains to everyone how the whole evening will proceed. Each station is managed by one of our colleagues and the goal is clear:"Everyone must enjoy it. Including us!" 18:00"Welcome!" Our office manager Eliška welcomed guests at the guest list all night with her beautiful smile. The musical accompaniment was provided by our colleague Lukáš, whom you know from the customer service line. In his free time, he is a DJ, so the choice for the best .pepper..DJ was obvious! The space was filled with exotic tones of Asian beats, which enhanced the great atmosphere all night long. The .pepper..whee! wheel of fortune kept spinning as long as it could. Our new internal processes manager Marťa took it under her wing – visitors could spin to win, for example, the item „for a shot with David“ – the co-founder who devoted the whole evening (not just) at the bar to guests and partners. The greatest excitement was at the .pepper..sorting station for pepper sorting – everyone handled it excellently with both hands and sticks. This station was managed by our financial director Teddy, who supervised the sorting with the same precision as farmers in Cambodia. The .pepper..test station for recognizing pepper by smell was overseen by our graphic designer Tom, who was last in Cambodia in January and entertained everyone with travel stories. The quiz station .pepper..quiz was run by Šárka, whom you know from festivals, and who takes care of restaurants and the store. The questions were not only educational but also entertaining. You could learn everything about farming and weddings in Cambodia in a playful way! Our Lucka, who has been with us since the founding of .pepper..field and has been involved in events for several years, was at the cocktail .pepper..bar where we served our ready-to-drink pepper cocktails by Marcel Jinoch and Landcraft as a welcome drink. And in the whirl of the evening, you could also meet Aleš at the .pepper..market. It’s no coincidence that he was given the role of the entertainment department in .pepper..field marketing, which was responsible for this beautiful event! The fun began, lines formed, the night woven with conversations with interesting guests, which we streamed live on our Facebook and Instagram, passed incredibly fast. Many more people arrived than we expected and the atmosphere was great. We screened a pepper film from our farms, chatted with the host, and introduced each of the stations. Even those who seemed like they would just say hello, have a glass, and leave, eagerly collected .pepper..coins. At one point, there was a crowd at all the stations. And even when the food ran out, everyone stayed because they were playing, enthusiastically chatting and shouting to each other about all they had just learned. Among them was our new helper from the packing team, Tobiáš, who lent a helping hand at the bar and catering. Probably no one left empty-handed. And if someone did leave without a pepper gift, then at least with a good mood or a nice photo from our photo booths. Ladies could also get a .pepper..woman t-shirt, which was waiting for them to change into in the restrooms for free. This was so that there would be even more of us – members of the pepper family –. Introducing our most peppery gin yet

Another year, another amazing .pepper..gin. Again in a limited edition and again in collaboration with Martin Žufánek. White pepper has a somewhat tarnished reputation worldwide. Poor processing and peeling from unripe black pepper are unfortunately typical for pepper from large sellers who ship it to our continent improperly dried, which significantly affects its aroma and taste. And that is a great shame because white pepper is something absolutely unique, especially true for Kampot pepper. True white Kampot pepper is actually the heart of red pepper, which is hand-peeled after several days of water soaking. Once it dries in the sun, our farmers carefully sort it. Its characteristic aroma and taste are finally “locked in” in vacuum packaging and sent to us in Europe. You will enjoy notes of kaffir lime, nutmeg blossom, cedarwood, and grapefruit with every opening of the pouch or turning of the grinder. A Christmas gift like a drunk… embroidered. Meet our stars of Great Taste 2023

A year has passed and the London jury once again awarded the so-called gastronomic Oscars for the best products in the world. This year again, peppers, cheeses, chocolates, and even truffles competed against each other. Out of 14,205 samples from across continents, we earned 23 stars and once again shone as the most successful Czech company, bringing home the most awards for the taste of our products from Great Taste! We received stars for 11 of our products – a total of 23 stars. We are most proud of the fresh pepper category, which received 3 stars in total, meaning that the jury favored the taste of green pepper in salt flower, fermented pepper, and freeze-dried pepper. Freeze-dried (lyophilized) Kampot pepper with salt continues the success after it received the highest rating two years ago, GREAT TASTE – GOLDEN FORK in the global superfinal. "Instant explosion of flavor, rich and spicy, salty and hot, fragrant and aromatic.The taste is exactly what we would wish for – long-lasting and piquant." Equally well rated by the judges was Green Kampot pepper in salt flower, about which the jury said: "Wow! It’s truly an explosion of flavors – fresh, celery-like, piquantly sour with a hint of fruity heat and spice.The berry literally crunches in the mouth, releasing a beautiful taste on the palate and tempting for more food." And three stars were also awarded to the presidential edition of our Fermented salted Kampot pepper. "How can such a small berry offer such an explosion of flavor, heat, fruit, and spice?It is warming, fiery, intense, and absolutely stunning." The GREAT TASTE competition thus confirmed this year that our Kampot pepper reaches the highest quality of all producers worldwide. This was reflected in the evaluation of products from our partners who work with our pepper. Congratulations to the family smokehouse Trneček, who make salmon with Kampot pepper. They received a total of 3 stars for two of our joint products, and last but not least MarmelLady – for our pear jam with lyophilized pepper, which also earned 1 star.

Fall in love with green salted, lyophilized, or fermented salty peppers just like the judges and cook with them comfortably and confidently at home, as if you were visiting a Michelin-starred restaurant. You already know how to handle dried peppers in a mill. Or you can remind yourself in some of our previous articles. But from today, you will become a professional chef because we will advise you on how to work with the category of fresh Kampot peppers. Because they are all soft, they could clog your mill mechanism. Therefore, use them whole, crushed in a mortar, chopped, or broken with the flat edge of a knife. Let's start boldly with green pepper in salt bloom This is the freshest form of Kampot pepper that we can deliver to your home from the pepper fields in Cambodia. Our farmers pick the stems and sort every single berry before they, so to speak, put them into a salt brine and vacuum-pack them. What makes Kampot pepper better?

Basically in everything. Similar to tomatoes from a garden compared to tomatoes from a supermarket. Anyone who still hasn't grasped the essence of the uniqueness of the peppercorns we import from the Kampot province in Cambodia may wonder what makes this pepper better than others. To understand why it is considered the best pepper in the world, we must go directly to the plantations of small Kampot farms, where pepper vines sprout from mineral-rich soil and peppercorns ripen under the beneficial rays of the local sun. White, black, green or red? All types of pepper are actually the fruits of a single plant, the black pepper vine. Similar to many other plants, the quality of the fruits is influenced by a variety of factors, with the most important being the environment in which the plant grows and the way it and its fruits are cared for. Just as French or Italian slopes are ideal for growing grapevines and thus these countries produce truly quality wines, Cambodia’s Kampot is also a suitable place for growing pepper. The pepper vines here grow from a substrate that has an ideal balance of sand, clays, and humus. The soil is rich in minerals, providing the root system of the vines with ideal nutrition for rapid growth and the production of truly high-quality peppercorns. Poor or insufficiently large grains are discarded, so only the true top-quality grains end up in the bags. The grilling season has finally kicked into full gear, so it's time to think about new recipes that will blow everyone away as the top grillmaster. This season, fresh flavors are trending, which don't have to be hidden only in salads or drinks, but can also be sneaked onto the hot grill. Our fresh green pepper will help you with that. You can find green pepper from us in several varieties: lyophilized, meaning freeze-dried fresh pepper. Also fermented pepper or green pepper in a brine solution. Although they are always juicy and mildly spicy green peppercorns, the way they are processed differs, and thus the possibilities of how to use them on the grill vary. Lyophilized pepper Lyophilized pepper is green pepper stripped of all moisture. Therefore, you don't have to be afraid to put it in a mortar, lightly crush it, and add it, for example, to a marinade or season meat directly with it. A letter for you from Cambodia by .pepper..field

After two hours of exhausting motorcycle travel at noon and in 38 degrees, we arrive at the farm of our farmer Tav Bora. It is one of the 203 farms we support. We are welcomed with a hug and a broad smile. "Look, the whole family is smiling and has beautiful teeth, " I notice immediately, as this is not a given in Cambodia, quite the opposite.Healthcare – especially dental care – is extremely expensive. For us, this is a sign that our work makes sense. To help you understand – healthcare in Cambodia is costly, and therefore we try to motivate most of our farmers to invest the money from fair trade purchases into three areas – healthcare, school fees for children, and farm cultivation. But now about that smile. Our colleagues Aleš, Tom, and Lukáš came to the Kampot farms for the first time. They decided on their own and bought tickets because they wanted to experience Cambodia firsthand. The farmers are a bit shy; I am teaching them how to bow and greet properly.Farmer Tav Bora is cheerful as always and is preparing coconuts and fruit from the garden for us. Her husband, father, and three other daughters help her. "We are doing well, " she describes. "I have six children – three daughters and three sons – all of them are at university, just imagine! I am most proud of my daughter; she wants to be a doctor, look, she even goes to school on Saturdays, " she points to her daughter who is dressed in more festive clothes.We sit and talk. Our two Cambodians, Ajaa and Nicky – the heart of the project – who know the farmers very well, translate for us. Young people who themselves come from the street and now help us with this most beautiful project. This year was terribly difficult, and the war in Ukraine and its consequences at many levels have also affected our project, we agree with Tav Bora. She understands the situation well and that we are doing our best, and she confirms to us that just as she could always rely on us, so we can rely on her.She simply does not want to cooperate with anyone else. "You are the only ones who pay us official fair trade prices and the only ones who have always cared about us and been interested in us. There are others now who would like to buy our pepper, but we will only sell to them what is left, " she describes the situation. For us, this is extremely important because we feel that the support for the project also comes from the farms. We talk for about an hour about what troubles them. Our colleagues run around the farm and see for the first time the beautifully grown pepper trees.They join in picking the green peppercorns with the young farmers who are currently on shift. "This can't be possible, I never realized that picking peppercorn by peppercorn is such crazy manual labor! " complains colleague Tomáš, who has only been working for a few minutes. :-) Colleague Aleš is playing Czech memory game with the girls and explaining to them what kind of animals we have in the Czech Republic. The girls are excited and keep the memory game. They taste Czech dried apples and plums and completely forget about the time. Colleague Lukáš got lost on the farm and enthusiastically runs between the pepper fields and animals. The animals fall in love with him. The sunset slowly arrives and we all gather for departure. Klárka has black fingers from picking fresh green pepper, “just like Czech walnuts! ” she laughs. Lukáš wants to adopt a dog, Tomáš is nibbling fresh green peppercorns, David and Aaja are taking notes from the meeting with the farmers to keep improving. We sit sweaty and dirty on the motorcycles and at sunset we leave for the two-hour trip back to the city. We are tired but full of euphoria. Full of enthusiasm and love for the project, which when you see it on site, fills you with great happiness. Doing things differently, well, and exceptionally is not only our motto but also the motto of many honest producers in our surroundings. Mythical beauty, the ability to seduce with a glance, and otherworldly musical and dance talent are all characteristics of the magical apsaras, female beings of Southeast Asia who have become one of the cornerstones of Cambodian cultural heritage. Their legacy is now taught to little schoolgirls in Cambodia, and we had the opportunity to see one such dance performance! They can be compared to European nymphs or fairies These are otherworldly beautiful female beings who, with their stylized dance featuring typically bent fingers on their hands, could enchant any man. Depictions of dancing apsaras appear on the stone walls of temples, especially in the most famous one, Angkor Wat. There should be up to 3,000 images of these dancers there, which proves the significant status they held in ancient times. During the greatest flourishing of the Angkor period, these dancers had the task of performing sacred rituals, ritual dances, and welcoming important guests in the royal palace. They provided services that pleased both the senses and the spirit and became a colorful part of the already astonishing temple complex. The fame and significance of the apsaras gradually declined over time, but their art survived for many centuries and is still cultivated in Cambodia today. The local inhabitants are rightly proud of their Khmer past and still keep some of the ancient traditions alive. That is why the dance of the celestial nymphs is very popular in the country, and many young girls devote themselves to its training, starting already in early childhood. The dance creations are a sequence of complex hand movements accompanied by characteristic facial expressions There should be up to two thousand such movements, and if one of the dancers wanted to perform them all in sequence, it would take about two hours. The hand movements are also accompanied by hundreds of body positions. However, the movements are not just dance art; each movement holds a certain meaning and message. Thus, even a slight change can alter the communicated dance. The entire beauty of this art is emphasized by richly decorated costumes with floral motifs, complemented by shiny jewelry and elaborate crowns. Today’s apsaras exactly replicate the appearance of their ancient predecessors.

Green fermented pepper – our finest black gold from Kampot

Black, red, and white pepper are known and often used in almost every kitchen. However, among Czech chefs, green pepper is not very common, which stands out with its fresh taste, completely different from the classic pepper as we know it. The reason for this is simple. Fresh green organic and naturally grown pepper has no chance to survive the long journey to Europe. Nevertheless, we have found a way to bring it to your table. The secret is fermentation with natural sea salt hand-harvested from salt pans on the Kampot coast, where salt crystals are drawn from seawater by the power of the sun. This salt preserves freshly harvested pepper so well that it can endure the journey to Europe, allowing you to enjoy the flavor loved even by the farmers who grow the pepper. Green fermented pepper is mild, appropriately fresh, and brings only a slight spiciness. Its flavor profile develops gradually in the mouth, slowly transitioning from citrus and conifer notes to the characteristic pepper taste.
