Kampot pepper is grown in Kampot province, located in the far south of East Asian Cambodia.

This is a region that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the highest quality in the world. Not without reason, this pepper has earned a protected geographical indication, similar to French champagne. We buy pepper from small family farms under direct trade conditions that guarantee fair compensation for every grower, and we strive to promote this approach among other traders. Green lyophilized pepper brings the maximally fresh taste of green peppercorns.

And in this case, expect a peppery taste full of pungency in a very intense and rich form. In the flavor of green lyophilized pepper, fresh notes combine freshly cut grass, green tea and citrus with a delicate touch of sea salt flavor.

Processing

Freeze-dried green pepper is obtained by harvesting the delicate, still unripe peppercorns.

They are not traditionally sun-dried, but instead undergo the so-called freeze-drying process. During this process, the peppercorns are dried with frost, which removes their moisture. The added Kampot salt keeps the peppercorns fresh even during transportation. Once unpacked, all they need is a drop of oil or water to restore the moisture, which the frost-dried peppercorns reabsorb, and they regain their texture and flavor, as if you had just plucked them from the pepper vine.

Thanks to the careful selection that meets the strict quality requirements for Kampot pepper, set by the Kampot Pepper Association, only the very best peppercorns are hand-picked. They are then vacuum-sealed to preserve their quality and freshness during the journey to the Czech Republic, where they are further selected, packaged, and delivered right to your table.

Usage

Freeze-dried green pepper from Kampot is the most versatile of the green peppers we offer.

Crushed, it pairs wonderfully with any type of meat, dark, light, game, or fish. To freshen pasta, baked dishes with cheese and mushrooms as well as sauces. It definitely does not go unnoticed even in autumn soups, you can experiment with it in desserts and ice creams, and the most discerning can also enjoy it in combination with truffles.

This pepper is best crushed in a grinder before being soaked in liquid. Do not put the soaked green freeze-dried pepper into the grinder anymore.
