The hand-crafted delicate work, which has remained unchanged for hundreds of years, is what the extraction of coarse-grained sea salt looks like.

It crystallizes on the surface of special pools called salinas, into which ocean water is channeled and enclosed. The water, under the influence of the sun and wind, gradually evaporates, and on its surface, salty crystals form.

The formed crystals are collected by hand, without any intervention of technology, using only long wooden rakes. As a result, the structure of the salt remains consistent and the salt is perfectly clean and of the highest quality.

The collection and processing of sea salt are, much like with pepper in Kampot, handled by individual small farms. Families of farmers pass down the tradition of sea salt production from generation to generation. The salt is therefore of complete organic quality, without the need for any subsequent refining. And just like with pepper, even from these farmers, the salt we purchase directly, to ensure that for their hard work they receive the reward they deserve.

Usage

Thanks to its delicacy and structure, salt flower is used primarily as the final touch to a prepared dish.

Certainly does not belong in a grinder, simply crush them lightly between your fingers and sprinkle the delicate crystals on the surface. They will quickly dissolve and perfectly enhance the flavor of the dish. If, in addition, you apply the salt flower just before serving, it will create on the surface of the dish an amazingly crystalline effect on both savory and sweet dishes.

Perfectly pure, full of flavor and minerals, such is the salt from the salt pans of Cambodia’s Kampot province.

The tradition of harvesting sea salt in the region is rooted just as deeply as the cultivation of pepper. The conditions here are absolutely ideal. Intense sun, ocean breeze and pleasant climate. Already centuries ago, they encouraged the establishment of salt pans and the harvesting of salt from the ocean. With its quality, it can be compared to sea salt from some of the most renowned regions in France or Portugal.
