Handmade delicate work, which has remained unchanged for hundreds of years, is what sea coarse-grained salt extraction looks like.

It crystallizes on the surface of special pools called salinas, into which ocean water rushes and is trapped. The water, aided by the sun and wind, slowly evaporates, and on its surface, salty crystals are formed.

The resulting crystals are collected by hand, without any mechanical intervention, only with the help of long wooden rakes. As a result, the salt’s structure remains consistent and the salt is perfectly pure and of the highest quality.

The collection and processing of sea salt are handled, just like the pepper in Kampot, by individual small farms. Farmer families have passed down the tradition of sea salt production from generation to generation. The salt is therefore of absolute organic quality, without any subsequent refining process. And just like with pepper, sea salt from these farmers is purchased directly, ensuring that they receive the proper reward for their hard work.

Usage

Thanks to its rapid absorption, it is ideal for any kind of meat processing, e.g. koshering.

Thanks to its good adhesion and aesthetic perfection, it is widely used in the final seasoning of dishes, whether it is for carpaccio or caramel or chocolate desserts.
