Processing

The manual delicate work, which has remained unchanged for hundreds of years, is how coarse sea salt is obtained.

It crystallizes on the surface of special pools called "salinas", into which ocean water is driven and enclosed. The water slowly evaporates under the influence of the sun and wind, and salt crystals form on its surface.

The resulting crystals are collected by hand, without any technical intervention, using only long wooden rakes. As a result, the salt's structure remains consistent, and the salt is perfectly pure and of the highest quality.

The collection and processing of sea salt, similar to pepper in Kampot, are managed by individual small farms. Farmer families pass down the tradition of sea salt production from generation to generation. Therefore, the salt is in absolute bio-quality, without the need for any subsequent refining. And just like with pepper, we also purchase the salt directlyfrom these farmers to ensure they receive proper compensation for their hard work.

Usage

Thanks to its absorption speed, it is ideal for any meat processing, such as koshering.

Due to its good adhesion and aesthetic perfection, it is widely used in the final seasoning of dishes, whether it is carpaccio or caramel or chocolate desserts.

Origin

Perfectly pure, full of flavor and minerals, such is the salt from the salt pans of Cambodia's Kampot province.

The tradition of obtaining sea salt is as deeply rooted in the region as the cultivation of pepper. The conditions here are absolutely ideal. The intense sun, ocean breeze, and friendly climate have been encouraging the establishment of salt pans and the extraction of salt from the ocean for hundreds of years. Its quality can be compared to sea salt from the most renowned regions in France or Portugal.

Award

Quality is our top priority, as confirmed not only by the certificates our salt carries but also by the awards it receives from world competitions.

Among the most significant is the award given to our salt within the competition Great Taste, one of the most prestigious competitions in the world of gastronomy.

However, sustainability is also important to us, which we do not perceive as just empty words, as evidenced by the SDG's award given to truly sustainable and socially responsible projects.
