Kampot pepper is grown in Kampot province, located in the very south of Cambodia in East Asia.

This is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It is no coincidence that this pepper has received a protected geographical indication, similar to French champagne.
We purchase pepper from small family farms under direct trade conditions that guarantee a fair reward for every grower, and we strive to promote this approach among other traders.

Characteristic

Black pepper, when ground, releases notes of eucalyptus, camphor, and thyme, accompanied by the scent of lime peel.

They gradually transition into a seaside aroma with developing fruit notes. The dominant aroma is peaches and nectarines, which are accompanied by pine and earthy notes of Cambodian mountain soils full of minerals.

Processing

In the case of black pepper, the peppercorns are harvested when they are still green.

Subsequently, they are dried on intense Cambodian sun, during which they acquire their characteristic black color and wrinkled surface.

Thanks to careful selection corresponding to the stringent quality requirements for pepper exported from Kampot, as set by the Kampot Pepper Association, only the very best peppercorns are hand-selected. They are subsequently vacuum-packed to ensure that the quality and freshness are preserved during the journey to the Czech Republic, where they are further selected, packed, and delivered right to your table.

Usage

Thanks to their different taste, aroma, and pungency, the various types of pepper are suitable for different uses. Black pepper is a universal ingredient that hardly gets lost in any dish.

Nevertheless, it is ideal to pair it primarily with dark red meat. It will elevate every steak on the grill or in a pan to perfection, yet it also finds its application in classic sauces, soups and it also pairs wonderfully with pasta. The more finely you grind Kampot pepper, the more intense the pungency will be, on the other hand, larger fragments or whole peppercorns will lend the dish more distinct tones of pepper.
