Kampot Pepper is cultivated in the Kampot province located in the very south of Southeast Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. This pepper has rightfully earned protected geographical indication, similar to French Champagne.

We purchase pepper from small family farms under direct trade conditions, which guarantee fair compensation for every grower and we strive to promote this approach among other traders as well.

Characteristic

Peppers differ from each other in their taste and aroma, which you can hardly find in pepper bought in regular supermarkets.

Black pepper releases tones of eucalyptus, camphor, and thyme accompanied by the scent of lime peel after grinding.These gradually transition into a maritime aroma with developing fruity tones.The dominant aroma is peach and nectarineaccompanied by the scent of pine and earthy tones of Cambodian mountain soil full of minerals.

The peppercorns come from small family farms in the Cambodian province of Kampot, where they have been cultivated for generations with respect for the soil, nature, and people. Farmers adhere to traditional methods that guarantee not only excellent taste but also the ethical origin of the product.

The set is also maximally environmentally friendly thanks to the use of recycled and natural materials that meet the certification of sustainable forestry.

Processing

We divide Kampot pepper into three basic colors, which differ from each other by the processing of the fruits of the pepper vine.

In the case of black pepper the grains are harvested at the moment when the peppercorns are still green. They are then dried under the intense Cambodian sun, during which they acquire their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe peppercorns. They ripen to a deep red color and are full of fructose, which gives this type of pepper its unique flavor.

White pepper is a specialty obtained from fully ripe red peppercorns. They are then dried in the direct sunlight and soaked again to remove the red husk, leaving only the creamy white peppercorn.

Thanks to the careful selection corresponding to the stringent quality standards for Kampot-exported pepper, as determined by the Kampot Pepper Association, only the best grains are hand-picked. They are then vacuum-sealed to ensure that the quality and freshness during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your table.

Usage

Thanks to the varied taste, aroma, and spiciness, different types of pepper are suitable for various purposes.

Black pepper is universal, which hardly gets lost in any dish. Nevertheless, it is ideal to pair it primarily with dark red meat. It elevates every steak on the grill or in a pan to perfection, yet it also finds its place in classic sauces, soups and it also pairs wonderfully with pasta.

Thanks to its fruity character, red pepper is the king of cold cuisine. It is suitable for vegetable salads, pairs well with risotto, soups, and don't hesitate to experiment with it when preparing sweet desserts or mixed drinks. However, avoid pairing it with dark meat; instead, combine it with fish or light poultry.

White pepper is suitable for light meat. It excellently enhances the flavor of seafood and pairs well with risotto, creamy soups and its flavor does not get lost even when combined with a good sauce.

The more finely you grind Kampot pepper, the more intense the spiciness will be, whereas larger fragments or whole grains will impart more specific peppery notes to the dish.
