Kampot Pepper is grown in Kampot province, located in the far south of East Asian Cambodia.

This is an area that, thanks to its coastal climate and geological conditions, enables the local farmers to produce pepper of the highest quality in the world. It is no coincidence that this pepper has earned a protected geographical designation, similar to French champagne. From small family farms, we purchase pepper under direct trade conditions, which guarantee a fair reward for every grower, and we strive to promote this approach even among other traders. As a result, by purchasing from us, you not only obtain pepper of the highest quality, but also the assurance that you are buying a sustainable and ethically responsible product, which helps provide its producers with medical care and education for their children.

Characteristic

Green freeze-dried pepper delivers the utmost fresh taste of green peppercorns.

Even in this case, expect a pepper flavor full of spiciness in a very intense and rich form. In the taste of green freeze-dried pepper, fresh notes blend freshly cut grass, green tea and citrus with a subtle touch of sea salt flavor.

Processing

Freeze-dried green pepper is obtained by harvesting tender, still unripe pepper berries.

They are not traditionally dried in the sun, but undergo the so-called freeze-drying process. During this process, the berries are dried by freezing, which removes their moisture. The added Kampot salt keeps the berries fresh even during transport. Once unpacked, all they need is a drop of oil or water to restore the moisture that the freeze-dried pepper berries reabsorb and regain their structure and flavor, as if you had just plucked them from the pepper vine.

Thanks to careful selection that meets the strict requirements for Kampot pepper quality, as defined by the Kampot Pepper Association, only the best berries are hand-selected. They are subsequently vacuum-sealed to ensure that quality and freshness are preserved during the journey to the Czech Republic, where they are further sorted, packaged, and delivered right to your table.

Usage

Freeze-dried Kampot green pepper is the most versatile of the green peppers we offer.

Crushed, it pairs perfectly with any type of meat, dark, light, game, or fish. It refreshes tpastas, baked dishes with cheese and mushrooms and also sauces. It certainly doesn’t go amiss even in autumn soups; you can experiment with it in desserts and ice creams, and the most discerning ones can also enjoy it in combination with truffles.

This pepper is best crushed in a grinder before soaking in liquid. Do not put soaked freeze-dried green pepper into the grinder anymore.

Thanks to the materials used and the special sachet sealing technology, neither air nor moisture reaches the pepper.

Thanks to this, the grains retain authentic taste and aroma of Kampot pepper. After emptying, you can, as part of sustainability, upcycle and continue to use them in a variety of other ways.
